Simple, easy and quick zucchini salad! What I like to do is clean my zucchinis with the back of a kitchen sponge that is coarse. You do want to keep the skin on, thats where the vitamins are! Just make sure that its super clean! Then, cut off a little on each end and boil for 25 minutes. Once they are done, drizzle with some olive oil, lemon and some salt and enjoy!
