Breakfast Focaccia

Ingredients

  • 400 grams self raising flour
  • 1 greek yogurt (200g)
  • salt and pepper
  • oregano
  • 3 Tbsp homemade tomato sauce
  • 3 slices smoked bacon
  • 1 cup grated cheese
  • 3 eggs

Directions

  1. Mix the flour with a tsp of salt and a hand full of grated cheese. Add the yogurt and mix. Knead on a floured surface until the dough comes together and isn’t sticky.
  2. Grease a small tray with olive oil and open up the dough to fit inside. Then, smear over the tomato sauce, add some salt and oregano, then the rest of the grated cheese and the bacon and top off with the eggs.
  3. Bake in a preheated oven on 220 degrees celsius for 15 minutes or until golden on top and the eggs cooked to your liking.
