Leftover spinach with rice? Make some spinach balls! Delicious, bite size and no one will ever suspect that this is a leftover creation!!!
- 2 eggs
- 1 cup breadcrumbs
- half a cup of flour
- olive oil for frying
- lemon to garnish
- All you need to do is drain as much of the juices as possible in a colander! Then place your ingredients in 3 separate bowls and begin by moulding a small spinach ball then dip it in the following order: flour – egg – breadcrumbs!
- Add at least a cup of olive oil in a skillet and preheat it.
- Fry your spinach balls for 30 seconds on each side just so that the crumbs turn golden brown, then lay them on some paper towels to drain any excess oil! Done!
