Baby Carrots made tasty! I combined my love for carrots with my addiction for pistachios and made this delicious sider for you to try! Best recipe I have come up with ever!
- Dressing for 20 baby carrots:
- 1 Tablespoon balsamic vinegar
- 4 Tablespoons Olive oil
- 1 tsp honey
- 100g pistachios (shell free)
All you need to do is boil the carrots for 5 minutes, just enough to soften them! They are so delicate that if you leave them longer they will break apart! Crush the pistachios just enough in a grinder (I used a mortar and pestle) Mix the wet ingredients well until combined and to that add the crushed pistachios! Serve on top of the carrots and indulge!
