Bruschetta

Sometimes a bruschetta is all you need for a nice snack! I had some fresh basil in my hands these days so I whipped up a delicious pesto sauce. My Bruschetta’s have basil pesto with chopped tomato and Feta with extra virgin olive oil! Simple and delicious!

For the Pesto sauce…

Ingredients

  • 2 cups of fresh basil leaves
  • 1 clove garlic
  • ½ cup finely grated parmesan cheese
  • ½ cup extra virgin olive oil
  • 1/3 cup pine nuts
  • salt and pepper to taste

For the bruschetta’s you will need one baguette cut into diagonal thin slices. Place them on a tray with a drizzle of olive oil and salt and bake them in an oven until golden brown and crisp! Your base is ready!

Directions

It’s so simple. In a food processor add your basil leaves, garlic and pine nuts! Pulse several times then add parmesan. While pulsing, add olive oil gradually and salt and pepper to taste. Your pesto is ready to spread over your  bruschetta’s! You can also use it as a sauce for your pasta, give it a shot!
