Chocolate Banana Cake

  • 3 overripe bananas, mashed
  • 1 cup dark brown sugar
  • 3/4 cup olive oil
  • 2 large eggs
  • 1½ cups all-purpose flour
  • ½ cup cocoa powder
  • 1/2 cup chocolate drops
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract


  1. Mix all wet ingredients in a bowl. Mash the bananas with a fork and add them too.
  2. Whisk flour and cocoa powder in a bowl and add baking soda, salt and mix until blended. Add flour/cocoa mixture to the wet ingredients and mix until smooth. Fold in the chocolate drops and place batter into a greased loaf tin.
  3. Bake for an hour or until a wooden skewer comes out clean when inserted into the middle.
