Delicious Mince Pie

For the dough:
400gr flour
200gr cold diced butter
200gr strained greek yogurt
50ml milk
1 egg white
1 tsp salt
1 tsp baking powder
(1 egg yolk mixed with a tsp water for the top before cooking)

For the filling:
300gr beef mince
1 finely diced onion
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp dried basil
Salt and Pepper
Some finely chopped parsley
Olive oil
200gr home made tomato salsa

Let’s cook:
First prepare the bolognese filling. Saute the onion with the mince in some…alot…of olive oil! Crush it with a spatula or wooden spoon as it sautes so it can be as fine as possible. Add 2 cups of water, lower the heat to a low and let it simmer, covered, for 30 minutes.
Add the sauce and the rest of the ingredients . Uncover and let it simmer on medium heat until it thickens. Set it aside to cool down when it does.
For the dough:
In a blender/mixer blitz the flour with the butter for 10 seconds until crumbly. I used my trusty Thermomix TM6 to make the dough! Add the rest of the ingredients and form into a dough! Split in half and roll out the first half and place it over a greased pie pan. Add the mince, roll out the other piece and place it on top. Seal the edges and with whatever dough is left, create lovely shapes on top! Cut a cross in the middle, egg wash on top and bake in a pre heated fan forced oven for 180°C for 35 minutes! Enjoy!
