- 1 Tbsp coconut oil
- 3 boiled beets
- 1 garlic clove
- 1 piece of ginger (size of the garlic clove)
- Beetroot never tasted this good! The process is simple. I used ready boiled beets but you could always boil them yourself if thats what you prefer!
- Cut them first in slices and then into thin strips. Heat up a skillet with 1 Tbsp of coconut oil. I insist on the coconut oil! Add your beets, a sprinkle of salt and grate as much garlic and ginger you like over the top!
- Saute for 5 minutes on high heat mixing as you go and serve either with yogurt which is obviously the best combination or with a simple salad!
