Sole Fish

Most of us, when frying fish put it in a thick batter either with egg and breadcrumbs or yeast and beer! Im not saying thats wrong but theres definitely a healthier and easier way to fry fish, especially this kind! Corn Flour is the secret! (NOT to be confused with cornstarch. The exception is in British and Australian recipes where the term “cornflour” is used synonymously with the U.S. word cornstarch!) It is the hardest of flours and when cooked correctly, it creates a delicious crunch! What I do is, clean, rinse and salt my fish and to the corn flour I add 1 Tbsp of vegetable spice! Or fish spice if you can find some! For every 150g of flour. Make sure the oil your frying in is extra hot, and especially with sole fish make sue that its not taking a bath in the oil! You only need to cover the base of the pan because the fish is quite thin! 4-5 minutes on each side on high heat and your good to go!
