Ingredients
- 3 zucchini
- 3 large carrots
- 2 ripe avocado
- 1/4 cup olive oil
- 1 tsp cumin
- Juice of 1 small lemon
- 1 tsp salt
- pepper
- *** spiralizer
Directions
- Wash the zucchini, peel the carrots and turn them into noodles through the spiralizer
- Heat up a frying pan and add the carrots first and saute for 5 minutes. Then add the zucchini and saute for an extra 5 to 10 minutes. Drain them in a colander from all their juices, add salt and pepper and set aside.
- Add the avocado, olive oil, lemon juice, cumin and salt into a blender and blend until creamy. Add it to the zoodles, if you like add some finely chopped parsley and serve! Ideal for a meatless Monday meal! Enjoy!
