Zoodles with a creamy avocado sauce


  • 3 zucchini
  • 3 large carrots
  • 2 ripe avocado
  • 1/4 cup olive oil
  • 1 tsp cumin
  • Juice of 1 small lemon
  • 1 tsp salt
  • pepper
  • ***  spiralizer


  1. Wash the zucchini, peel the carrots and turn them into noodles through the spiralizer
  2. Heat up a frying pan and add the carrots first and saute for 5 minutes. Then add the zucchini and saute for an extra 5 to 10 minutes. Drain them in a colander from all their juices, add salt and pepper and set aside.
  3. Add the avocado, olive oil, lemon juice, cumin and salt into a blender and blend until creamy. Add it to the zoodles, if you like add some finely chopped parsley and serve! Ideal for a meatless Monday meal! Enjoy!
