Raspberry Energy Balls

Ingredients:

100gr oats

6 medjool dates, pitted

150gr any nut butter you preffer

150gr raspberries (plus an extra 50g or more for coating)

Desiccated coconut

1 Tbsp chia seeds

Method:

In a small bowl add the 50gr of raspberries (or more for extra fruity taste and texture) and press down to a rough paste with a fork. Add desiccated coconut, mix and set aside.

Add all the other ingredients into a blender (I used my thermomix, 30 seconds on speed 5)

Once the mixture is ready, form into balls and roll in the coconut/raspberry mixture. Set for 2 hours in the fridge in an air tight containter! Enjoy after a workout, as a snack or even pack a couple or more for your kids at school! ❤
