Ingredients
For the fava:
- 1 package (250g) yellow fava
- 2 medium sized onions
- olive oil
For the caramelised onions:
- 2 large onions
- 5 Tablespoons natural grape syrup extract
- olive oil
Directions
- Rinse the fava under cold running water and add it to a pot to boil with 1.5 L of water. Remove froth with a spoon as its boiling. Then add a some salt. Add a good drizzle of olive oil, the 2 onions cut in half and lower the heat to a medium. Simmer and keep stirring occasionally until thick.
- Once it has thickens, blend till smooth with a hand blender and set aside to cool.
- Cut the 2 large onions into thin slices and saute with a generous amount of olive oil in a small pan (that has a lid). Lower the heat, cover and let simmer for at 15 minutes until they have cooked. Then add 5 Tablespoons of grape syrup (Its called petimezi in Greek, you might be able to find it at a delicatessen!!!) Mix well and simmer on high heat for an extra 5-10 minutes until caramelised.
- To serve, place the fava on a small platter and the onions over the top! This combo of flavours is incredible!
