Α delicious recipe that my mother in law gave me, bless her! The success in this cake lies in the preparation of the phyllo pastry!
Ingredients
- 1 packet of phyllo pastry
- 1 orange with the peel mashed up in the blender
- 4 eggs
- 1 tsp vanilla essence
- 1 greek yogurt (200g)
- 1 cup vegetable oil
- 1 cup sugar
- 1 sachet baking powder
For the syrup:
- 2 cups sugar
- 1 cup water
- 1 orange (as above)
Directions
Let me first explain the process of the phyllo pastry. You buy it frozen from the store so you have to open a tablecloth, spread out the sheets one by one and let them dry out completely over night! The next morning, with your hands crumble out the sheets of phyllo pastry until they have a flour like texture. This will take some time! You could put them in a blender but it wont have the same texture once cooked. This is the success to the recipe!
Now to the complete method…
In a bowl, using a whisk, beat your eggs with the sugar. Then add all the ingredients, leaving the phyllo last and mix well. Place in a 34cm anti-stick baking tray that has been rubbed with a bit of margarine/butter. Bake until the cake has a golden brown colour on top (about 45min) on 180-200 degrees C, depending on your oven! Once its cooked, remove from oven and let it cool completely.
While its cooling, prepare your syrup. Add ingredients in a small pot and simmer with the lid on so that it doesn’t evaporate! Remove it off the heat and hot as it is, pour it evenly over your cooled cake. Once you have poured it, take 2 spatulas and carefully lift the sides of the cake so that the syrup goes under! The cake will be very fragile so make sure not to break it, it needs to be done slowly and carefully!
For serving, ideally add some vanilla ice cream or melted chocolate! Its delicious both ways!
