Rooster cooked in wine, served with traditional, Cretan “skioufihta”.

These are a type of homemade pasta, just like the Italians have gnocchi, in Crete we have these!

Ingredients

  • 1 medium rooster cut into 8 pieces
  • 2 large onions cut finely
  • ½ cup extra virgin olive oil
  • 2 cups of dry white wine
  • salt
  • pepper
  • 5-10 all spice grains
  • 6 ripe tomatoes without seeds, grated finely
  • 1 tsp sugar
  • 1 tsp honey

Directions

Pour the olive oil in a deep pan and fry the rooster until golden on all sides. Remove the pieces into a bowl and saute the onions for a couple of minutes. 

Add the rooster back into the pan making sure you add all its juices as well! Bring to the boil and add your wine. 

Then, add the rest of the ingredients and once its reached the boiling point, lower the heat down to 3 (with your oven being from 1 – 9) cover it with a lid and simmer for an hour or until your meat has cooked through! 

Serve with the traditional pasta or with fried potatoes and grated cheese! The choice is yours!
