Cool summer salad with quinoa, couscous and lentils! You probably know it also as Tabbouleh! This is my version!


  • ½ cup couscous
  • ½ cup lentils
  • ½ cup quinoa
  • 2 small tomatoes
  • 1 large avocado
  • 1 large onion (or 2 spring onions, the choice is yours)
  • salt and pepper
  • Balsamic Vinegar
  • Some freshly chopped parsley (optional)


  1. Prepare your couscous, lentils and quinoa the usual way (by boiling them separately) Drain and set aside to cool in a large salad bowl.
  2. Finely cut your tomato,onion and avocado and add them to the salad bowl. Salt and Pepper to your desired taste and mix until all the ingredients are combined. Leave in the fridge for at least 30 minutes before serving cold with some balsamic vinegar! Enjoy!
