Ingredients:
2 medium zuchinnis
2 eggplants
2 potatoes
2 onions
2 lrg carrots
Finely chopped parsley
Salt & Pepper
150ml homemade tomato salsa
3 cloves of garlic

Method:
Wash, peel and cut the vegetables. Not too small, not too big! Add them into a casserole dish with a lid. Add salt and pepper, chopped garlic, parsley, salsa heaps of extra virgin olive oil and mix well. Bake for 45 minutes in a preheated oven on 200°C covered. Then, uncover and bake for another 1-2 hours until most of the liquid has evaporated! This dish is abaolutely amazing served with Feta cheese!!!
