What is more simple and healthy than a platter of boiled, fresh, hand picked wild greens? The mix depends on what you have available but of course you can supply yourself with them at your local supermarket/grocery store!
The method is simple. Clean them well in a sink full of clean water with a few tablespoons of vinegar. Rinse and repeat the process at least 2 more times to ensure that you have removed all the sand and possible small bugs!
Boil for about 15 minutes in a huge pot filled with salted (1-2 Tablespoons) water! Drain, and rinse immediately under cold water so that they remain bright green in colour! Serve with a generous amount of olive oil, lemon and salt! This is a GREAT sider for fish but also very healthy and nutritious as a small meal!
