Ingredients
- 2 eggs
- 1 cup brown sugar
- ½ cup olive oil
- 1 ½ cups grated carrots
- 5 tablespoons freshly squeezed orange juice
- ½ cup chopped walnuts
- 1 ½ cup self raising flour
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ½ teaspoon grounded clove

- 50g butter, softened
- 200g cream cheese
- 400g icing sugar sifted
Directions
- Preheat oven to 200 degrees Celsius and grease a baking pan (or a muffin tray too, as you wish!)
- In a large bowl, beat together the eggs and sugar until creamy. Stir in the olive oil until well combined. Add the grated carrots, orange juice and walnuts and mix well. Add the flour, salt, cinnamon and clove and mix it until it has combined well.
- Pour the mixture into the prepared baking pan and bake for 25 – 30 minutes or until a toothpick inserted in the centre comes out clean and it is golden brown on top. You can choose to add cream cheese frosting on top once it has cooled. It’s the ultimate combination for this cake!
- To make the cream cheese frosting, mix all ingredients together with a mixer and let it set in the fridge for at least 15 minutes before serving with your cake. This is about the time it takes for your carrot cake to cool! Enjoy!
