Zucchini Fritters


  • 4 large zucchinis
  • 1 grated carrot
  • 1 large onion finely diced
  • 10 mint leaves
  • 2 Ts finely chopped parsley
  • 2 Ts finely chopped dill
  • salt
  • freshly ground pepper
  • 1 egg
  • 100g Feta cheese crumbled
  • 6-8 Ts bread crumbs
  • Olive Oil for cooking
  • Flour for cooking


  1. Gently clean your zucchinis, cut off the ends and grate finely. Add one tablespoon of salt and squeeze the most of the juices that you can. I used a strainer and let it strain for at least half an hour. 
  2. Before placing into a clean bowl, strain once more with your hands. Add the rest of the ingredients and mix well! I baked mine but you could fry them for a crunchier outer layer. 
  3. But for baking, preheat your oven to 200 degrees and with a baking brush, add a good amount of olive oil. Form your fritters and dip into some flour on both sides and place on the tray. With the same brush, add some olive oil on the top and bake for 45 minutes on 180degrees. 
  4. If you want to fry them, heat up your pan and fry until golden brown on both sides!
